Cabbage Kathi Rolls and Cutlets-Best Winter Time Tasty and Healthy Snack to Enjoy

Whenever we talk about green veggies, one of the popular names that strike in our mind is cabbage. Strong reason for this is that as a fresh and a green leafy vegetable, it gives tons of nutritional benefits with low amount of calories and fat. However, as the nature of a human being, he or she gives priority to taste rather than overall health while choosing any food item, including the mentioned green veggie i.e. cabbage.

Thus, in order to give a perfect blend between excellent taste and good health, we have introduced a few tasty and healthy recipes prepared with cabbage in combination with some other veggies in small amounts. In addition, to meet the objective of diet-friendly recipe or gluten-free recipe, we have used sorghum i.e. jowar flour and gram flour i.e. besan instead of Maida. These include the following-

·         Cabbage Kathi Rolls and
·         Cabbage Cutlets

Note-Initial preparation and stuffing for both of these recipes are similar, but the difference lies in the shape and extent of frying cutlets and rolls in a pan.

Ingredients Required

·         1 small size or half big size of cabbage
·         Handful of green peas
·         1 small size carrot
·         1 tomato
·         2 to 3 green chilies
·         Ginger garlic in clove forms or as paste
·         Cumin seeds
·         Oil (mustard oil is preferable)
·         Turmeric powder
·         Chili powder
·         Chili sauce
·         Tomato sauce
·         Schezwan chutney
·         Coriander powder
·         Cumin powder
·         Garam masala
·         Salt to taste
·         Jowar/sorghum 1 cup
·         Besan/gram flour of half cup

Preparation of the Stuffing

To start the preparation, you have to chop each of the veggies finely and place into a mixer grinder to make a semi-solid type of paste.
·         Heat one or two tablespoon of oil in a pan and add cumin seeds
·         Add the semi-solid mixture in the pan
·         Add each of the aforementioned spices and sauces one by one.
·         Add salt to taste
·         If required add only a few amount of water to avoid sticking of the paste

Preparation of Dough

To prepare the dough, you have to mix the stuffing with sorghum and gram flours with a pinch of salt and 1tablespoon of oil.
Here, you have to prepare a bit hard dough, so that you may easily prepare cutlet or roll in the later steps.

Preparation of Rolls or Cutlets

For Kathi Rolls

·        Take a small size of the dough and make it just like a shape of a thin roll i.e. or stick (a kathi in Hindi)
·         Repeat the procedure for each of the dough’s pieces.
·         Heat the oil in a pan and fry it.
·         In case of rolls, you have to opt for deep fry.
·         Finally, you should serve the rolls hot with pickle, curd, chutney or sauce.

For Cutlets

·         In case of cutlets, you have to make flat shapes before fry them in a pan.
·         Here, you may go with either shallow fry or deep fry depending on your taste buds and other health requirements.
Once you complete the process, serve the cutlets hot with any type of sauce or chutney of your own choice.
